Fun fact - the EPA (US) requires municipalities to provide a consumer confidence report yearly. My report doesn't show any data for iron but it does show lead, copper, manganese, chlorine, fluoride, arsenic, hardness level, PH, and quite a few other metrics. This is a way to at least figure out how hard your water is or figure out how good/poor quality the drinking water is in your area.

Distilled water has less ions than regular but isn't free if them entirely. That's why deionized water exists. You shouldn't drink either without adding minerals back into them. You need minerals (the ions in regular water) to live. Drinks like Gatorade are sold specifically to add more "ions" (they're branded as electrolytes) back into your system if you're sweating excessively. It won't kill you from just one drink, but it's certainly not recommended to drink regularly. Distilling water can get rid of impurities that regular deionized water could still have like viruses and bacteria. Different purification processes exist for different purposes.

On an unrelated note to my other comment, did you know you can do something similar with purple cabbage or cauliflower? The purple pigment in the plant is sensitive to pH, so when you boil them their pigment acts as an indicator, changing color based on the pH level. It's not actually a professional pH strip, but it's a fun kitchen experiment you can run while blanching your veggies for a meal
