I'll give the "paper beats rock" the explanation my child brain was able to think when I was younger and didn't understood how could a paper beat a rock: - the paper covers the rock like a cozy blanket - it makes the rock calm and ends its will to fight - paper wins

My thought is that it’s more about which hand shape can cause more pain to the other. Paper can catch rock and twist opponent’s wrist>rock will crush opponent’s fingers when extended for scissors>fingers hurt more when jabbing into opponent’s palm when opened for paper

Paper just covers rock -- weakening or disabling it, essentially. It doesn't destroy it. It's also nice to include a relationship in the game that isn't just forceful domination of your opponent, but more like a special ability.

To be fair, you're holding the paper in place at two points. That makes it way easier for rock to break.
