I helped run a Greek restaurant for several years and your recipe is very close to what we made.  We went through a hotel pan of baklava about every three days so it never got old.  One thing, though:  let either the baklava or the syrup cool before pouring the syrup on and the top layers won't curl up as much.

I've made Baklava and Tiramisu for my son's wedding.  I did not find my recipe so I looked online and watched several YouTubes.  I liked yours the best.  It was closest to the one I had made before and i enjoyed listening to you.  Great job!

No Greek pastry chef wastes time buttering phyllo that way. They dip the brush in the butter and sprinkle the leaves. The baklava still turns out great. The other thing is that the syrup and baklava need to be drastically opposite temperatures, otherwise it turns to mush. Make the syrup first and let it cook on the counter while you prepare the baklava, then put they syrup in the fridge to get cold while the baklava is in the oven. Spoon the very cold syrup onto the very hot baklava. Or you can cool your baklava in the fridge and then make the syrup and spoon it on. You can also substitute the butter with olive oil.

Made this today and it's the best recipe I ever made!!! My previous recipe always had sugar in the nut mix but I found it too sweet, so I tried it with only sweet was the syrup. It is fantastic! Thank you so much. <3

I've never made baklava as I have always imagined it would be the most fiddliest and intricate recipe and process.  So my ears pricked up when I saw you were cooking it and the video was only a few minutes!   I can't wait to give this a try now that I know it's not as co.plicated as I imagined.
