■Ingredients (2 servings)
・1 chicken thigh (300g)
・1/2 teaspoon grated ginger
・1 tablespoon sake
・4 tablespoons potato starch
☆Sweet and spicy sauce
・1 tablespoon sake
・1 tablespoon mirin
・1/2 tablespoon sugar
・1 and a half tablespoons soy sauce
・1 tablespoon white sesame seeds
■Procedure
(1)Cut the chicken into bite-sized pieces.
(2) Put the chicken, grated ginger, and sake in a frying pan and rub together until the liquid has evaporated, then spread out. Add potato starch and coat the whole surface, then arrange the chicken skin side down.
(3) Heat over medium heat and cook slowly for about 3 minutes until the fat has rendered out and the chicken is golden brown, then turn it over. Cook for 5 to 6 minutes, turning occasionally, until the meat is cooked through and crispy.
(4) Turn off the heat and push the chicken to the side. Add ☆ to the empty space, heat again, and cook over low-medium heat while stirring until it thickens.
