Now, this week I’m bringing you something special: **Honey Walnut Shrimp**, my wife’s absolute favorite. If you’ve ever wondered how restaurants get their shrimp so tender and crispy, I’m breaking it all down for you.

In this video, I’ll show you how to use the **velveting method**, make the perfect batter, and whip up a sauce that’s creamy, sweet, and just right. And yes, it’s better than Panda Express!

**Ingredients:

#### *Velveting Shrimp*
15–20 large shrimp (peeled and deveined)
1 tsp MSG
1/4 tsp baking soda
2 tbsp cornstarch
1/2 tsp chicken bouillon powder
1 tbsp sesame oil
2 tbsp mirin (or cooking wine)

#### *Batter*
1 cup self-rising flour
1/2 cup corn flour
1 cup water (plus 2–3 tbsp extra, if needed)

#### *Walnuts*
1 cup walnuts

#### *Sauce*
1/2 jar (about 1/2 cup) sweetened condensed milk
1/4 cup mayonnaise
1–2 cloves garlic, minced
1 tbsp olive oil

Instructions**

#### *1. Prepare the Shrimp*
1. Mix MSG, baking soda, cornstarch, chicken bouillon powder, sesame oil, and mirin in a bowl.
2. Add the shrimp and toss until evenly coated.
3. Let the shrimp marinate for 10 minutes while you prepare the batter.

#### *2. Make the Batter*
1. In a mixing bowl, combine self-rising flour and corn flour.
2. Slowly add water, stirring until the batter is smooth and lump-free.
3. Adjust with extra water if necessary to achieve a smooth consistency.

#### *3. Fry the Shrimp*
1. Dip the marinated shrimp into the batter, ensuring they are well coated.
2. Heat oil in a deep fryer or skillet to 350°F (175°C).
3. Fry the shrimp in batches for 5–7 minutes, or until golden brown and crispy.
4. During the last 2 minutes of frying, add the walnuts to the oil to toast them lightly.
5. Remove the shrimp and walnuts and set them aside on a paper towel to drain.

#### *4. Make the Sauce*
1. Heat olive oil in a wok or skillet over medium heat.
2. Add minced garlic and sauté until fragrant.
3. Stir in mayonnaise and sweetened condensed milk until smooth and creamy.

#### *5. Toss and Serve*
1. Add the fried shrimp and toasted walnuts to the sauce, tossing gently to coat evenly.
2. Serve immediately and enjoy!
