Memorial Day Lunch for One; Frugal Home Manicure

After retiring from a busy, demanding career as a RN, and after my 5 children are grown and have their own careers and children, I realize that retirement is an ongoing journey of changes and adjustments. I will share some of my experiences and welcome others to share what makes your golden years of retirement enjoyable and fulfilling.

Maizie and I are celebrating Memorial Day 🇺🇸🇺🇸. My lunch is a hotdog sandwich, watermelon salad, and potato salad.
Maizie’s Lunch is a portion of her homemade dog food: boiled chicken, oatmeal, cauliflower, green beans, egg, carrots, and applesauce.

I show you how I do my frugal manicure at home once a month. My nails never looked so good before I started using this nail product—Nail Magic. I get it at Sally’s Beauty Supply and save my nail salon $$ to put on things which give me joy and happiness in my retirement.

Maizie and I go for a walk in the evening and watch a beautiful sunset afrer the thunderstorms.

MELON SALAD FOR ONE
Cut melon into bite size pieces (watermelon or cantaloupe)
Sprinkle with Sea Salt
Add fresh ground black pepper
Dash oilive oil over it
Sprinkle with Parmesan cheese
Garnish with fresh chopped mint leaves
Serve very cold, adjust amount of ingredients for number of servings

POTATO SALAD FOR ONE
Dice and boil 1 Yukon gold potato until tender
Drain liquid
Lightly salt and add 1 teaspoon butter
Add:
1 tablespoonful mayonnaise
1 teaspoon Dijon mustard
1 teaspoon sweet pickle relish
3 olives cut in half
Toss lightly to combine all ingredients
Serve warm or cold
