Ingredients:
1-cup AP flour
1-cup cornmeal
1-TBS baking powder
1/2-cup brown sugar
15oz can of pumpkin purée
2-large eggs
1/2-cup milk
1/2-cup sour cream
5-TBS unsalted butter (melted)
1-TBS lard
Preheat oven to 425, grease a ten inch cast iron skillet with 1-TSB lard, place in the oven while preheating.
Mix dry ingredients thoroughly, add remaining wet ingredients. Pour batter in the preheated skillet. Bake for 20-30 minutes (ovens will vary). Bake until golden brown and cornbread is pulling away from the sides of the skillet. I also insert a toothpick or fork in the middle to make sure fully done.
