The secret’s are:
1.- THE LOW AMOUNT OF SUGAR COMPARED TO THE FLOUR, helps the spreading of the cookie, so it stays thick!
2.- CHILLING THE DOUGH. When we refrigerate cookies, the flour gets fully hydrated and the fats solidify which will make the dough firmer, which will make the spreading slower, allowing the dough to raise!

113g unsalted butter
113g brown sugar
113g white sugar
12g vanilla extract
7g fine salt
7g baking powder
7g baking soda
2 pinches of cinnamon
2 pcs cold egg
295g AP flour
250g chopped toasted pecans
160g milk chocolate chips
120g semi-dark chocolate chips
160g dark chocolate chips 60%
