Serves 5-6
Recipe in English:
Ingredients:
-Khajoor (Dates) deseeded 10-12
-Bhunay chanay (Roasted grams) 2 tbs
-Badam (Almonds) 10-12
-Olper’s Milk 1 Cup
-Olper's Milk 1 Litre
-Sugar 2 tbs or as required
-Custard Powder 1 & ½ tbs
-Olpers Milk ¼ Cup
-Tukhme balanga (Basil Seeds) soaked 2 tbs
-Ice crushed
-Pista (Pistachios) sliced
Direction:
-In a bowl add dates, roasted chickpeas, almonds, and milk.
-Dip them well in milk.
-Soak for 1 hour.
-Add soaked ingredients in a blender and blend well until smooth, set aside.
-In a wok add milk, bring it to boil.
-Stir with spatula, add dates mixture, mix well.
-Add sugar and mix well.
-Cook on medium flame until starts boiling.
-In a bowl add custard powder, and milk, then mix well.
-Add custard mixture in boiling date milk.
-Cook for 2-3 mins on low flame or until milk becomes slightly thick.
-In a serving jug add soaked basil seeds, ice cubes, dates sharbat. Then mix well.
-Serve chill, garnished with pistachios, & date.

Ajza:
-Khajoor (Dates) deseeded 10-12
-Bhunay chanay (Roasted grams) 2 tbs
-Badam (Almonds) 10-12
-Olper’s Milk 1 Cup
-Olper's Milk 1 Litre
-Sugar 2 tbs or as required
-Custard Powder 1 & ½ tbs
-Olpers Milk ¼ Cup
-Tukhme balanga (Basil Seeds) soaked 2 tbs
-Ice crushed
-Pista (Pistachios) sliced
Directions:
-Ek bowl mein khajoor, bhunay huay channay, badam aur doodh dalain.
-Sare ingredients ko achi tarah doodh mein dip karain.
-1 hour tak bhigo kar chhor dain.
-Phir in bhigoe huay ingredients ko grinder mein dal kar achi tarah blemd karain jab tak smooth na ho jaye, phir side par rakh dain.
-Ek wok mein doodh dalain aur ubal anay dain.
-Spatula se hilatay rahen phir dates mixture shamil karain aur mix karlain.
-Cheeni dal kar achi tarah mix karain.
-Darmiyani aanch par tab tak pakaain jab tak ubal na aajaye.
-Ek bowl mein custard powder aur doodh dal kar achi tarah mix karain.
-Ubalay huay khajoor wale doodh mein yeh custard mixture shamil karain. 2-3 minute tak halki aanch par pakaain ya jab tak doodh thora thick na ho jaye.
-Ek serving jug mein bhigoe huay tukhmalangy, baraf ke cubes aur khajoor ka sharbat dal kar mix karain.
-Thanda kar ke pista aur khajoor se garnish kar k serve karain.
